This recipe is very adjustable depending on what you have on hand and your preferences, I have made it with just cucumbers, beans, and tuna. I will list ideas but keep in mind you can eliminate and add as you wish!
1 can tuna
1-2 pepper chopped
½ cucumber chopped
½ onion chopped
1 can beans, whatever type you like or have
2 stalks celery
½ cup grated cheese of choice
1 cup finely chopped spinach
4 medium size mushrooms chopped
½ cup hemp seeds
½ cup pumpkin seeds
Could add quinoa for added protein, iron, fiber, and other vital nutrients.
Mix all ingredients. Enjoy as is or add dressing of choice, I like to add a little bit of mayo (guilty pleasure), Dijon mustard, or some chili powder. It is very versatile. Enjoy as a side dish or on a wrap.
